- 2 cups Eggplant, medium
- 1 cup Red Onion, finely chopped
- 2 tablespoons Ginger, minced
- 1 tablespoon Garlic, minced
- 1 teaspoon Chili powder
- 1/2 teaspoon Garam Masala
- 1/2 teaspoon Amchur powder
- 2 tablespoons Lemon juice
- 1 tablespoon Cilantro, chopped
- 1/2 cup Bread crumbs
- 1/2 cup Corn oil
- to taste Salt
- 2 tablespoons Water

Step 1: Preheat oil in a deep frying pan to a temperature of 375°F (190°C).

Step 2: In a bowl, mash the roasted eggplant with a fork until it's smooth.

Step 3: Add the chopped onion, minced ginger, minced garlic, chili powder, garam masala, and amchur powder to the bowl with the eggplant.
