Dhaba-Style Lamb Koftas with Saag Aloo
A traditional North Indian recipe, originating from the dhabas along the Grand Trunk Road. Tender lamb koftas are served with a creamy and slightly spicy saag aloo, made with mustard greens and potatoes, adding a delightful twist to this classic dish.

- 500g g chicken or lamb mince
- 1 large onion
- 2 tbsp ginger paste
- 1 tbsp garlic paste
- 2 tbsp ghee or vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1 teaspoon salt
- 1 teaspoon mustard seeds
- 1 teaspoon cumin powder
- 2 large aloo or potatoes
- 2 cups mustard greens or saag
- 1/2 teaspoon garam masala powder
- 2 tbsp lemon juice

Step 1: In a large mixing bowl, combine the lamb mince, onion, ginger paste, garlic paste, ghee or vegetable oil, cumin seeds, coriander powder, red chili powder, and salt. Mix well until the ingredients are evenly distributed.

Step 2: Divide the mixture into 8 equal portions and shape each portion into an oval-shaped kofta. Place the koftas on a plate or tray and refrigerate for at least 30 minutes.

Step 3: Preheat a grill or grill pan to medium-high heat. Grill the koftas for 3-4 minutes on each side, or until they are cooked through. Transfer the koftas to a plate and cover with foil to keep warm.

Step 4: In a separate pan, heat 1 tablespoon of ghee or vegetable oil over medium heat. Add the cumin seeds and mustard seeds and let them sizzle for a few seconds.

Step 5: Add the mustard greens or saag to the pan and cook until they are wilted. Add the potatoes and cook for another 5-7 minutes, or until they are tender.
