Dundubhi Ki Kachori
Dundubhi Ki Kachori is a traditional Indian snack from the state of Maharashtra, made with a flaky potato and lentil filling, deep-fried to perfection and served with a side of tangy chutney.
🛒 Ingredients
- 2 cups all-purpose flour
- 1/2 cup ghee
- 3/4 cup water
- 1 cup bengal gram
- 1 cup chana dal
- 2 cups boiled potatoes
- 1 large onion
- 1 inch ginger
- 2 piece green chili
- 1 tbsp cumin seeds
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 tsp salt
- 2 tbsp lemon juice

Step 1: In a large mixing bowl, combine flour, ghee, and water to make the dough for kachori. Knead the dough for 5 minutes and set aside.

Step 2: Heat oil in a pan over medium heat and sauté the cumin seeds until fragrant.

Step 3: Add the chopped onion, ginger, and green chili to the pan and sauté until the onion is translucent.

Step 4: Add the bengal gram and chana dal to the pan and sauté for 2 minutes.

Step 5: Add the boiled potatoes, coriander powder, garam masala, and salt to the pan and mix well.

Step 6: Divide the dough into 6 equal portions and roll out each portion into a thin circle.

Step 7: Place a tablespoon of the potato mixture in the center of the dough circle and fold the dough over to make a half-moon shape.

Step 8: Heat oil in a deep frying pan over medium-high heat and fry the kachori until golden brown.

💡 Pro Tips
To make the kachori crispy, do not overcrowd the frying pan. To make the chutney, combine equal parts of yogurt, lemon juice, and green chili in a bowl and mix well.
