A fusion dessert of India's iconic Ras Malai and the popular Gulab Jamun, in the form of a moist and creamy cake soaked in rose syrup. The unique combination of textures and flavors will transport you to the streets of Old Delhi.

- 2 1/4 cups Maida flour
- 1 1/2 cups Sugar
- 1 cup Ghee or unsalted butter
- 1 cup Cottage cheese
- 1/2 tsp Cardamom powder
- 1 cup Rose syrup
- 1 cup Heavy cream
- 2 tbsp Milk powder
- Saffron threads
- 1/2 cup Chopped pistachios

Preheat the oven to 180°C (350°F) and grease a 9-inch (23cm) round cake pan.

In a blender, blend the cottage cheese, sugar, ghee, and cardamom powder until smooth.

In a separate bowl, whisk together the flour, milk powder, and saffron threads (if using).

Add the dry ingredients to the blender mixture and blend until well combined.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

While the cake is baking, prepare the rose syrup by heating it in a saucepan over low heat until warm and fragrant.

Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes.

Transfer the cake to a wire rack to cool completely.

To assemble the dessert, place the cooled cake on a serving plate and brush it with the rose syrup.

To ensure the cake is well-set, don't open the oven door during the baking time. Also, use high-quality rose syrup for the best flavor. If you can't find saffron threads, omit them or substitute with a few drops of yellow food coloring.
