Kashmiri Kulcha is a traditional Indian flatbread originating from the region of Kashmir, known for its buttery and slightly sweet flavor. The addition of caramelized onions adds a depth of flavor and texture that complements the bread perfectly.

- 2 cups All-purpose flour
- 1 tsp Yeast
- 1 tsp Salt
- 2 tbsp Ghee
- 1 cup Lukewarm water
- 1 tsp Active yeast
- 1 tsp Sugar
- 1/2 cup Caramelized onions
- 1 tsp Coriander powder
- 1 tsp Garam masala powder
- 1/2 tsp Cumin seeds
- 2 tbsp Chopped cilantro

Step 1: In a large mixing bowl, combine the flour, yeast, salt, and sugar. Mix well.

Step 2: Add the lukewarm water and mix until a soft dough forms. Knead for 5-7 minutes.

Step 3: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 2-3 hours.

Step 4: Preheat a non-stick skillet or tava over medium heat.

Step 5: Punch down the dough and divide it into 8 equal portions. Roll each portion into a ball.

Step 6: Roll out each ball into a thin circle, about 6-7 inches in diameter.

Step 7: Heat a little ghee in the preheated skillet and place a kulcha on it.

To caramelize the onions, heat a little oil in a pan over low heat and cook the onions for 10-15 minutes, stirring occasionally. To make the kulcha more tender, cook it over a lower heat for a longer time.
