- 2 cups fresh blackberries
- 1/4 cup freshly squeezed lemon juice
- 1/2 cup honey syrup
- 4 cups sparkling water
- ice cubes
- 4 sprigs fresh mint leaves
- 2 slices lemon slices
- 1/4 cup blackberry puree
- 1 tablespoon lemon zest

Step 1: In a small saucepan, heat the honey syrup over low heat, stirring occasionally, until it dissolves and turns into a smooth, velvety texture.

To make the honey syrup, combine equal parts honey and water in a saucepan and heat over low heat, stirring occasionally, until the honey dissolves. For a thicker syrup, use less water. To make blackberry puree, blend 1 cup of fresh or frozen blackberries with 2 tablespoons of water in a blender or food processor until smooth. Strain the mixture through a fine-mesh sieve to remove the seeds.
