Mumbai Mango-Ginger Raita Parfait

- 1 cup Mango, diced
- 2 tbsp Ginger, grated
- 3/4 cup Yogurt, plain
- 1/2 cup Cucumber, sliced
- 2 tbsp tsp Cilantro, chopped
- 2 tbsp Lime juice
- 1/2 tsp Garam Masala powder
- pinch tsp Salt
- 1 cup Mint leaves, chopped
- 1/4 cup Caramelised Onions

Step 1: In a large bowl, whisk together yogurt, ginger, garam masala, salt, and lime juice. Refrigerate for at least 15 minutes to allow the flavors to meld.

Step 2: In a separate pan, caramelize the onions by cooking them over low heat for 10-12 minutes or until golden brown and fragrant.

Step 3: Just before serving, add the diced mango, cucumber slices, chopped cilantro, and chopped mint leaves to the bowl with the yogurt mixture and toss gently to coat.
