Baingan Bharwa is a flavorful North Indian dish where eggplant is stuffed with a mix of sautéed onions, ginger, and spices, then pan-seared to perfection. A twist to the traditional recipe is the addition of pan-seared gobhi, adding a nice crunch to the dish.

- 2 large Eggplants
- 1 inch Ginger
- 1 medium Onions
- 1 tsp Garam masala
- 1/2 tsp Cumin powder
- 1/2 tsp Coriander powder
- 1/4 tsp Turmeric powder
- 1/4 tsp Red chili powder
- 1/4 cup Cilantro
- 1 cup Gobhi
- 2 tbsp Oil
- 2 tbsp Lemon juice
- 1 tsp Salt
- 1/2 tsp Sugar

Step 1: Preheat the oven to 375°F (190°C). Cut the eggplants in half lengthwise and scoop out the insides.

Step 2: Sauté the chopped onions, ginger, and cilantro in oil until the onions are lightly browned.
