Shahi Tofu Tikka is a delicious Indian vegan dish originating from the royal kitchens of Rajasthan, India. This recipe is a fusion of traditional flavors and modern vegan twists, featuring marinated tofu cooked in a rich and creamy tomato sauce, served with a side of fluffy basmati rice and naan bread.

- 1 block tofu
- 1/2 cup non-dairy yogurt
- 2 tbsp lemon juice
- 2 tsp garam masala
- 1 1/2 tsp cumin powder
- 1 1/2 tsp coriander powder
- 1 tsp red chili powder
- 2 tbsp ghee
- 1 large onion
- 3 cloves garlic
- 1 inch ginger
- 1 cup tomato puree
- 1/2 cup coconut cream
- 1/4 cup cashew paste
- 1 tsp salt
- 2 cups basmati rice
- 4 pieces naan bread

Step 1: Cut the tofu into small cubes and set aside.

Step 2: In a large bowl, whisk together non-dairy yogurt, lemon juice, garam masala, cumin powder, coriander powder, and red chili powder. Add the tofu cubes and marinate for at least 30 minutes.

Step 3: Heat 2 tablespoons of ghee in a large saucepan over medium heat. Add the marinated tofu and cook until golden brown on all sides.

Step 5: In the same saucepan, add the remaining 2 tablespoons of ghee. Add the sliced onion and cook until golden brown.
