Smoky Southern Sweet Potato Gnocchi Bake

- 1/4 cup Canned pumpkin puree
- 1 1/2 cups All-purpose flour
- 1 tsp teaspoon Baking powder
- 1/2 teaspoon Salt
- 2 tbsp tablespoons Sugar
- 1/4 cup Unsalted butter
- 1/4 cup Brown sugar
- 1/2 teaspoon Cinnamon
- 1/4 teaspoon Nutmeg

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Boil the Russet potatoes in a large pot of salted water until tender. Drain and let cool.

In a mixing bowl, mash the cooled potatoes with a fork until smooth. Add the pumpkin puree, sugar, cinnamon, and nutmeg; mix well.

Using a ravioli cutter or a sharp knife, cut the potato mixture into 1-inch (2.5 cm) squares. You should end up with around 40-50 squares.

On a lightly floured surface, roll out the all-purpose flour to a thickness of about 1/8 inch (3 mm).

Cut out circles of the flour, using a cookie cutter or the rim of a glass. You should end up with around 40-50 circles.

Place a potato square in the center of each flour circle. Fold the dough over the potato, pressing the edges together to seal the gnocchi.

Bring a large pot of salted water to a boil and gently add the gnocchi. Cook for 2-3 minutes, or until they float to the surface.

While the gnocchi is cooking, prepare the brown sugar crust. In a small bowl, mix together the brown sugar, melted butter, and salt until well combined.
