🛒 Ingredients

  • 2 large Sweet Potatoes
  • 1 cup All-purpose Flour
  • 1/2 cup Rice Flour
  • 2 tbsp Nutritional Yeast
  • 1 tsp Salt
  • 1 tbsp Maple Syrup
  • 4 tbsp Vegan Butter
  • 1 sprig Fresh Sage
  • 1 tsp Garlic Powder
  • 1/4 tsp Cayenne Pepper

👨‍🍳 Instructions

  1. 1

Step 1: Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork a few times and bake for 45-50 minutes, or until tender.

  2. 2

Step 2: Allow the sweet potatoes to cool. Once cool enough to handle, peel and mash them in a large bowl.

  3. 3

Step 3: In a separate bowl, whisk together the all-purpose flour, rice flour, nutritional yeast, salt, and garlic powder.

  4. 4

Step 4: Gradually add the dry ingredients to the mashed sweet potatoes and mix until a dough forms.

  5. 5

Step 5: Roll out the dough on a floured surface to a thickness of about 1/4 inch (6 mm). Cut into 1-inch (2.5 cm) pieces.

  6. 6

Step 6: Bring a large pot of salted water to a boil and cook the gnocchi for 5-7 minutes, or until they float to the surface.

  7. 7

Step 7: While the gnocchi cook, melt the vegan butter in a large skillet over medium heat.

  8. 8

Step 8: Add the cayenne pepper to the skillet and cook for 1-2 minutes, or until fragrant.

  9. 9

Step 9: Remove the skillet from the heat and stir in the fresh sage and maple syrup.

  10. 10

Step 10: Drain the cooked gnocchi and add it to the skillet with the brown butter sauce. Toss to combine and serve immediately.

💡 Pro Tips

To prevent the gnocchi from sticking together, be careful not to overwork the dough. Also, make sure to not overcook the sweet potatoes, as they should be tender but still hold their shape.
